ESTATE

Domaine François Rousset-Martin was established in 2007 in the village of Nevy-sur-Seille in Jura. François, coming from a winemaking family, developed his passion for wine growing up travelling between Burgundy and Jura as his father was working for the Hospices de Beaune as a micro-biologist and the family owned a vineyard in Jura.

François obtained a degree in oenology in 2002 and apprenticed at various domaines in Rhône and Languedoc areas. In 2007, he started his own winemaking journey with a very scientific approach towards viticulture and vinification.

His current work is most focused on making previously inconceivable wines within the Château Chalon appellation, labeled as Côtes du Jura since he makes them in a non-oxidative (ouillé or topped-up) style.

 

VINEYARD

Soil structure is classically Jura with high proportion of clay, marl, limestone, in which hold the ability to produce wines with very fine acid. Varieties include Savagnin of 30 – 80 years old, Chardonnay of 20 – 65 years old and Pinot Noir, Poulsard of 20 years old and the vineyards are farmed organically, certified by Ecocert.

The grapes are hand-harvested and selected before arrival to the winery.

WINEMAKING

François conducts winemaking in four different cellars with various natural temperatures, humidity and microbial activity levels for the distinctive vinification processes – sous-voile, ouillé, stainless steel procedures and élevage / storage. All wines are vinified in 228L demi-muids that are 3 - 4 years old.

All wines are bottled unfined and unfiltered with minimal or no sulphur.

WINES PRODUCED 

Château-Chalon Vignes aux dames

Vin Jaune is aged extensively for 8 years instead of the regular 6 years.

Cuvée du professeur Sous-Roche

The 0.25ha vineyard is located in the village of Château Chalon. The vines are owned by François’s father, who was a professor (Hence the name) at the University of Dijon. The wine is aged sous-voile or oxidatively for 12 – 18 months in old neutral barrels.

La Veine bleue de Bacchus Clos Bacchus

The 1.11ha vineyard is of approximately 40 years of age in the village of Menétru-le-Vignoble. This is a non-oxidative or ouillé style where the wines are fermented in neutral barrels and élevage lasted for 18 months in demi-muids before bottling.

La Chaux Chardonnay

The 0.4 ha vineyard was planted in limestone and marl approximately 65 years ago in the village of Château Chalon. This is a non-oxidative or ouillé style where the wines are fermented in neutral barrels and élevage lasted for 15 months on fine lees.

Cuvée Mémée Marie

The 40 year old, 0.7ha vineyards are located in the village of Lavigny. The wine is named after François’s grandmother Marie. This is an oxidative blend of 85% Chardonnay and 15% Savagnin made with 3 months sous-voile and barrel aged for 11 months.

Poulsard Noir

The reds are made with some stem-inclusion depending on the vintage influence (15% in 2018).
